Chocolate Breakfast Pudding

This chocolate breakfast pudding is fiber- and protein-packed, creamy, and nourishing. It’s a great option if you don’t want to use protein powder, whether for yourself or if serving to kids. If you or your kids are sensitive to the tang of plain Greek yogurt, you could use a sweetened variety or a more neutral-tasting brand like Fage. 

If the avocado trips you up, don’t worry! It adds a creaminess and nutrition, but you won’t taste it in the finished product.

If you do need to amp up the protein, you can of course add your favorite protein powder or powdered peanut butter, or even add some crumbled up protein bar on top!

There are endless topping possibilities, including granola or cereal, nut or seed butter, fruit, nuts, seeds, or chocolate chips. 

Ingredients

1 banana (frozen is best but not required)

¼ cup frozen avocado chunks or ½ of a frozen mini avocado

½ cup Greek yogurt

1-2 tbsp cocoa powder

½ tbsp chia seeds

Sweetener of choice, to taste (I used a tiny scoop of stevia extract powder)

Directions

In a blender or food processor, blend all ingredients until smooth. Taste and add sweetener if too bitter. Add toppings if desired and enjoy! If you have a weaker blender, you may need more liquid. Add a couple tablespoons of milk if needed. For a thicker pudding texture, let sit for 5-10 minutes.
