I’m a busy mom with a love of food and no tolerance for long, overcomplicated recipes.
Now, I know food blogs are a dime a dozen. But I created Busy Beal with the hopes of making something different. I have spent an embarrassing amount of hours scouring the internet, Pinterest, Instagram, you name it, for recipes that fit my needs. Recipes that don’t require time, energy, brain power, and ingredients that I just don’t have.
Perhaps you know the struggle: you’re hangry, you have multiple kids crying, fighting, or otherwise needing your attention. Your to-do list is already chock-full. You want to eat something fun and healthy but you have nothing prepped (maybe, like me, meal prep would be just another stressful thing on your to-do list).
This is where I come in. I’ve spent so much time trying to find recipes that worked for me. Sometimes I found them, but more often than not I created them. Are they easy? Yes. Are they actually quick? You bet. Would Gordon Ramsay turn his nose up at them? Most likely. But do I still make them again and again and look forward to them every time? Absolutely!
Most of my recipes are weight-loss/macro friendly, and I will also include kid-friendly recipes for especially picky kids like mine.
