High-Protein Bacon Egg Bake

This high-protein bacon egg bake dresses up your classic eggs and cheese in a little something special. The flavor combination of bacon, cauliflower, cheese, and sun-dried tomatoes gives your eggs the glow-up they’ve been begging for. And it’s got about 20 grams of protein to boot!

Have this for breakfast with a side of toast, lunch in an open-faced sandwich, or even dinner alongside a salad and some sweet potatoes. It serves as a great stand-alone snack as well.

Ingredients

½ cup low-fat cottage cheese

1 cup shredded cheese (I use mozzarella)

1 cup riced cauliflower (or veggie of choice)

4 large eggs

2-4 slices turkey bacon, chopped (or any type of meat you have on hand)

About 20 grams sun-dried tomatoes, chopped (you can just grab a good handful or use about ¼ cup)

Pinch of salt

Sprinkle of pepper 

Directions

Combine all ingredients in a 9-inch round or square pan (I use a silicone cake pan.) Grease pan if not using nonstick. Bake at 350 F for about 30-40 minutes or until firm throughout. If desired, sprinkle extra cheese on top and broil until bubby and starting to brown. This recipe also works in the microwave if you’re in a big hurry! Makes about 4 servings.
