You could make a healthy version using a more natural or sugar-free sweetener and a healthy pancake mix. Or use a more dessert-like mix with real sugar. Either way, kick back with an easy, single-serve dessert that will kick your cravings without leaving behind a big, tempting pan of leftovers!

Products I Use in This Recipe:
- Kodiak Cakes protein pancake mix
- Truvia sweetener

Ingredients
½ cup just-add-water pancake mix (I used Kodiak Cakes)
⅓ cup frozen blueberries (fresh will also work)
½ – 1 tbsp brown sugar (or sweetener of choice)
1 tbsp butter (light or regular)
More sweetener for batter if desired, to taste
Pinch of salt
Directions
- In a small bowl or container, melt the butter in the microwave.
- In a larger bowl (a large cereal bowl is fine), add the sugar/sweetener and blueberries and microwave for 1 minute (about 45 seconds if using fresh berries). Add salt and stir.
- In another cereal-size bowl, prepare the pancake batter according to package directions using 1/2 cup mix. Add extra sweetener if using and combine.
- Pour the melted butter over the blueberry/sugar mixture but do not mix. Pour the pancake batter over top of both and do not mix.
- Microwave for about 3 minutes or until the top looks set and springs back when touched. You should have a cake-like top over a gooey, sweet, rich berry base. Let cool and enjoy! Would be great with whipped cream, ice cream, or Greek yogurt for extra protein!
