This single-serving 3-ingredient protein pancake bowl is the perfect thing for when you’re craving a giant cinnamon roll (or something warm, squishy, doughy, and chocolatey) but need something more filling and nutritious! This is another one of those recipes I make over and over because it is so easy and satisfying. It is super customizable and great for any time of day.
It’s warm, gooey, cozy, and filling…did I mention the oh-so-satisfying sensation of biting into a big, squishy, bite of bready goodness? You might forget you’re eating over 20 grams of protein!

Ingredients
½ cup protein pancake mix (I use Kodiak Cakes, but see potential swaps below.)
½ cup Greek yogurt or a single-serve container of Greek yogurt (if using unsweetened you may want to add extra sweetener, but totally optional)
1 tbsp chocolate hazelnut topping of choice (or any hazelnut spread, frosting, nut butter, syrup, whatever sounds good to you! It is heavenly with ChocZero hazelnut spread.)
Directions
- In a microwave-safe bowl or container (about large cereal bowl size), combine the pancake mix, Greek yogurt, and extra sweetener if using. The batter will be very thick, like a bread dough. You can add a couple tablespoons of water or milk if needed.
- Swirl the chocolate hazelnut topping into the top of the batter.
- Microwave for about 2 ½ minutes or until set. Enjoy warm! I love to cut it into a few wedges, let the topping seep in while it cools, and then eat it with my hands like a sticky bun or cinnamon roll. Tip: if this comes out a bit dry on the edges, mix in 2 tablespoons of applesauce or pumpkin puree!
Swaps
Gluten-free: Use a gluten-free pancake mix.
No pancake mix? Use 1/2 cup flour + 1/2 tsp baking powder + sweetener to taste.
Dairy-free: Use a dairy-free yogurt and a dairy-free pancake mix.
