High Protein Teriyaki Meatball Sandwich

This high-protein teriyaki meatball sandwich is so tasty and easy to throw together! The idea unfolded while I was super hungry, scrambling around tending to kids, and needing fuel after a strength workout. When it was done, I grabbed a fork, hoping it tasted as good as it looked. It tasted even better than I expected!

This recipe turns leftover meatballs into something that feels like you ordered it from an upscale café or deli — except it’s hassle-free and ready in just 10 minutes! Not to mention it boasts over 18 grams of protein, plus healthy fats and fiber from the avocado.

You get sophisticated flavors with surprisingly minimal effort and skill. It will taste like you tried even though you didn’t!

Ingredients

2 slices bread or bun of choice*

½ of a mini avocado, ripe

4 pre-made meatballs*

½ Tbsp teriyaki sauce*, soy sauce, or coconut aminos

Shredded carrot for topping

Everything bagel seasoning or sesame seeds for topping

Directions

Place bread slices or bun halves side by side on a plate. Spread each half with about half of the avocado. Slice the meatballs in halves or quarters and arrange evenly over the avocado. Drizzle sauce over both halves. 

Broil in air fryer for about 7 minutes or until warmed through. Keep an eye on it so it doesn’t burn. Top with carrots and seasoning and enjoy!
