Healthy Funfetti Cake (Single-Serve + High-Protein)

A high-protein, healthy funfetti cake that you can make in just a few minutes? Wish granted! This single-serve dessert is wholesome enough to add to your breakfast rotation and doubles as a macro-friendly dessert. It would be perfect for an actual birthday as well!

Whether you’re craving funfetti cake or you just want something fun and new to try, you can’t go wrong with this easy microwave cake. It takes just a few simple ingredients, comes out to around 350 calories (or less, see FAQs), and packs 20 grams of protein! It can even be made gluten-free or dairy-free, making it suitable for a range of dietary restrictions.

Ingredients

Cake

½ cup Kodiak Cakes mix (or pancake mix of choice)

⅓ cup unsweetened applesauce

2 tbsp powdered almond butter (optional, see note 1)

Cake batter flavoring (amount will depend on what kind you’re using; I used 7 drops Dolce Flav)

½ – 1 tsp rainbow sprinkles, plus extra for topping if desired 

¼ cup water or milk 

Extra sweetener, to taste (optional)

Frosting Option 1

2 tbsp whipped topping (see note 2)

Frosting Option 2

1 tbsp whipped cream cheese

½ – 1 tbsp spreadable butter (I use light butter) or plain Greek yogurt

1 tsp sweetener (or to taste depending on type)

Sprinkle of salt (optional)

Tiny splash of vanilla flavoring (optional)

Frosting Option 3 

Store-bought frosting of choice (I love Miss Jones for cleaner ingredients and lower sugar)

Directions

  1. Combine all the cake ingredients in a large microwave-safe bowl or container (a deeper, narrower bowl works best but whatever you have is fine.) 
  2. Microwave for about 3 minutes or until set.
  3. Option 1: flip the cake out of the bowl into a plate. It should be easy, but you may need to loosen the edges and underneath with a spatula or other utensil. Let cool in the fridge for about half an hour, or the freezer for around 5 – 7 minutes, then frost and enjoy! Option 2: Leave in the bowl, frost, and enjoy right away! Both options are great, it just depends if you are in more of a hurry and don’t mind if the frosting melts into the cake. Option 3: make ahead and let cool in the fridge overnight. Frost when you’re ready to eat it!

Notes

  1. The powdered almond butter adds delicious birthday-cake-like flavor and extra protein, but you could also use powdered peanut butter, collagen powder, or protein powder, or just leave it out altogether if you prefer. You’ll need to adjust the water accordingly; the batter should be thick.
  2. I like the SoDelicious brand or TruWhip, which I get at Natural Grocers. Whipped topping, in particular, will dissipate into the cake, so it is best to let the cake fully cool before adding. This is my personal favorite frosting option for this recipe!

Frequently Asked Questions

Q: Can I make this gluten-free?

A: You sure can! This King Arthur protein pancake mix is gluten-free and works great in this recipe. Just use one serving of the King Arthur instead of the Kodiak Cakes. 

Q: Can I make this lower in calories?

A: Yes, if you need it to be even lower in calories, you can use ⅓ cup of the Kodiak Cakes (be sure to use a zero calorie sweetener). If you decrease the amount of Kodiak Cake mix, everything else remains the same, except decrease the water to 1 – 2 tablespoons.

Q: Can I make this in the oven or air fryer?

AL You definitely can if you prefer! Bake in a greased ramekin or other oven-safe pan at 350 for about 20 minutes or until set and a toothpick comes out mostly clean.
