5-Minute Protein Donuts

What if I told you you could eat four squishy, chocolatey donuts for about 340 calories and over 25 grams of protein? These 5-Minute Protein Donuts are so easy to make and come together lightning fast. They are perfect to help you kick your donut cravings, while still giving you nutritious fuel to help you reach your fitness goals.

Granted, the lack of deep frying, as well as the use of healthy ingredients, means the taste and texture of these aren’t quite the same as your typical bakery donuts. But for a fun, healthy breakfast or a satisfying after-dinner treat, these really hit the spot! If you want less hearty, more dessert-like donuts, you can use a pancake mix made from regular white flour instead of whole grains. You could even use regular all-purpose flour instead of pancake mix, adding about half a teaspoon of baking powder to help them rise.

Ingredients

  • ½ cup protein pancake mix (I use Kodiak Cakes)
  • ½ cup Greek yogurt (I used plain nonfat, but any kind works)
  • 1 Tbsp sweetener of choice (adjust depending on your taste and the sweetener you use)
  • 1 Tbsp egg whites, optional but helps texture
  • 1 Tbsp Miss Jones Chocolate Frosting (see notes)
  • Nonstick cooking spray if using oven

Directions

  1. Thoroughly combine pancake mix, yogurt, and sweetener (and egg whites if using). You may need to add a little water if your yogurt is super thick.
  2. Distribute batter (it should be very thick) into 4 cavities of a non-stick microwaveable donut pan (like this one). You may have to use your hands; if so, you can spray them with cooking spray to help prevent sticking from the batter.
  3. Microwave for about 3 minutes or until you no longer see wet batter. 
  4. Remove from pan (it should be easy), place on a plate and freeze for about 3 – 5 minutes to cool. Then frost with about  ¼ tbsp frosting each. Enjoy!

Alternate Oven Version

  1. Preheat oven to 350 F. Spray a donut pan with non-stick cooking spray.
  2. Thoroughly combine pancake mix, yogurt, and sweetener (and egg whites if using).
  3. Distribute batter (it should be very thick) into 4 cavities of the donut pan. You may have to use your hands; if so, you can spray them with cooking spray to help prevent sticking from the batter.
  4. Bake for about 15 minutes or until the donuts look firm and spring back lightly when touched.
  5. Remove from pan (it should be easy), place on a plate and freeze for about 3-5 minutes to cool. Then frost with about  ¼ tbsp frosting each. Enjoy!

Notes

I love the Miss Jones chocolate frosting! It uses clean, natural ingredients, only has 4 grams of sugar per tablespoon, and tastes amazing. However, this recipe works with a variety of frostings and toppings. If you try it and love it with something else, I would love to hear about it!
