3-Ingredient Sweet Protein Bun

This single-serving microwave sweet protein bun is the perfect thing for when you’re craving a giant cinnamon roll but need something more filling and nutritious. This is another one of those recipes I make over and over because it it so easy and satisfying! Super customizable and great for any time of day.

It’s warm, gooey, cozy, and filling…did I mention the oh-so-satisfying sensation of biting into a big, squishy, sticky bun? You might forget you’re eating over 20 grams of protein.

Ingredients

-1/2 cup protein pancake mix (I use Kodiak Cakes, but see potential swaps below.)

-1/2 cup Greek yogurt (if using unsweetened you may want to add extra sweetener, but totally optional)

-Topping of choice (it is heavenly with ChocZero hazelnut spread, but it works great with any hazelnut spread, frosting, nut butter, syrup, whatever sounds good to you!)

Directions

Mix pancake mix and yogurt in a deep microwave-safe bowl or container, like a deep cereal bowl. You may need to add a bit of water or milk of choice if your yogurt is too thick. Microwave for about 3 minutes or until batter is set and springy like bread and no longer wet.

You can top with your favorite topping and eat out of the bowl, or flip onto a plate and then add topping. Be sure to let cool for a bit first, as the inside will be very hot.

I love to cut it into a few wedges, let the topping seep in while it cools, and then eat it with my hands like a proper sticky bun or cinnamon roll. Enjoy!

Swaps

Gluten-free: Use a gluten-free pancake mix.

No pancake mix? Use 1/2 cup flour + 1/2 tsp baking powder + sweetener to taste.

Dairy-free: Use a dairy-free yogurt and a dairy-free pancake mix.
