This 5-minute fudgy mug brownie is one of those recipes I still can’t believe I created because it’s just that good! It ticks all the boxes: high-protein, single-serve, low sugar, low-calorie, short list of ingredients, super quick and easy, and, most importantly, crave-worthy and delicious! It’s the perfect remedy for that nighttime sweet tooth.
The secret ingredient is Equip’s Chocolate Prime Protein — it gives it a fudgy gooeyness and just the right amount of chocolate flavor. That said, I did include an alternate version if you prefer not to purchase this protein powder.

Ingredients
⅓ cup pumpkin puree (don’t worry; you can’t taste it!)
¼ cup oat flour (all-purpose will also work)
1 scoop chocolate protein powder (see note 1)
Extra sweetener to taste (see note 2)
½ tbsp chocolate chips (I like ChocZero or Bake Believe)
Sprinkle of salt (helps flavor, optional)
1 – 2 tbsp water, as needed
Directions
- In a mug or microwave-safe container, combine all ingredients except chocolate chips. Add a tablespoon or two of water, just enough to make a thick batter.
- Press chocolate chips into the top of the batter and microwave for about 2 ½ minutes or until set. Enjoy! You can top with ice cream, whipped topping, peanut butter, or whatever your heart desires!
Collagen ProteiN Version
⅓ cup pumpkin puree ( don’t worry; you can’t taste it!)
¼ cup oat flour (all-purpose will also work)
18 grams or about 2 ½ scoops of collagen protein powder (chocolate or unflavored)
1 tbsp cocoa powder
½ tbsp coconut sugar or other granulated sweetener (adjust to taste)
Extra sweetener to taste (see note 1)
Sprinkle of salt and splash of vanilla (helps flavor, optional)
1 – 2 tbsp water, as needed
5 grams or about 1 ½ tsp of unflavored gelatin
½ tbsp chocolate chips
Directions
- In a mug or microwave-safe container, combine all ingredients except gelatin and chocolate chips.
- Stir in gelatin, then press chocolate chips into the top. Microwave about 2 to 3 minutes or until set. Enjoy!
Notes
- What gives this the perfect, gooey texture is Equip Prime Protein in the chocolate flavor (I use the low sugar version, but the sugar-free one works great as well. Use code SFQW6QH8 for a discount.) If for any reason this protein powder doesn’t work for you, I have created an alternate version. It requires more ingredients and honestly isn’t quite as amazing as the Prime Protein version (I don’t know, it’s just magic in this recipe!). But it’s still great and fudgy!
- I use 10 drops of Sweet Leaf Sweetdrops in the Chocolate Raspberry flavor, which goes so incredibly well with the chocolate in this recipe! But they have a variety of flavors as well.
Frequently Asked Questions
Q: Can I try other chocolate protein powders?
A: You can certainly experiment, although it will definitely affect the texture of your final result. For this recipe in particular I highly recommend trying the specific combination of ingredients I have provided. If for any reason the chocolate Equip Prime Protein doesn’t suit your needs, you can try the alternate version of the recipe, which uses more widely available ingredients.
Q: Is this recipe gluten-free?
A: Yes! If you use oat flour it is naturally gluten-free.
Q: Can this recipe be sugar free?
A: Absolutely! All you have to do to make it completely sugar free is to use the sugar-free version of the Prime Protein (or, for the alternate version, the zero-calorie sweetener instead of coconut sugar), and sugar-free chocolate chips!
Q: I don’t like pumpkin. What can I use?
A: You honestly can’t taste the pumpkin! It just adds moisture and helps create the rich, fudgy texture. If you prefer, or have a pumpkin allergy, you can use sweet potato puree!
